Blueberry Coconut Baked OatmealI keep a running list on my smartphone called “Go-To Dinner Ideas.” It features meals that are both easy to make and sure to please, and I reference it often when making my grocery list for the upcoming two weeks (since we’re trying to save money by making fewer trips to the grocery store). 

The list features staples like tacos and pasta, plus some of our personal favorites like tuna melts and stir fries. 

It also includes these three delicious letters: B-F-D.

Breakfast For Dinner.

At least twice a month we have breakfast for dinner in some form or another—maybe an egg casserole with veggies or (my toddler’s personal favorite) pancakes with fresh fruit.

Last week we went with this Blueberry Coconut Baked Oatmeal, which totally hit the spot!

Blueberry Coconut Baked Oatmeal

Ingredients
  1. 2 medium bananas, sliced
  2. 2 cups blueberries, divided
  3. 2 cups rolled oats
  4. 1/2 cup unsweetened coconut flakes
  5. 1/4 cup brown sugar, lightly packed
  6. 1 tsp baking powder
  7. 1 tsp ground cinnamon
  8. 1/4 tsp ground ginger
  9. pinch each ground nutmeg, cloves, and salt
  10. 2 cups milk (skim works fine)
  11. 1 large egg
  12. 1 tbsp margarine or butter, melted & cooled
  13. 1 tsp pure vanilla extract
  14. 1 tbsp pure maple syrup
Instructions
  1. Preheat oven to 375. Lightly coat an 8-inch baking dish with cooking spray.
  2. Layer the banana slices over the bottom of the dish. Top with 1 cup blueberries, and set aside.
  3. In a medium bowl, mix together the oats, coconut flakes, remaining blueberries, brown sugar, baking powder, and spices. Set aside.
  4. In another bowl, whisk together the milk, egg, butter, vanilla extract, and maple syrup.
  5. Pour the oat mixture on top of the bananas and blueberries. Pour the milk mixture over the oat mixture.
  6. Bake for 35-40 minutes, until the top layer is lightly browned and crisp. Allow to cool for a few minutes before serving.

Note: I tried the recipe once with almond milk, and unfortunately the results were less than stellar. The texture just wasn’t right. My apologies to the vegan and dairy-free crowd!

  1. Yum! I’ve made something very similar with half oats, half quinoa, that I found in a quinoa cookbook. BFD is definitely a go-to dinner for me, seems like I can always whip something up even when it feels like I’ve got nothing in the house to eat. I’d love to hear your other go-to dinner ideas!

  2. We don’t do a ton of BFDs around here, as we often do more lunch/dinner combos. With Scott and I both working from home, and our meal schedules individually different It’s easier that way.

    Yesterday I made steak soup (started at 840, served about 140). Today we’re roasting a chicken which will become enchiladas and soup later this week.

    I’ll toss some rice and vegs with those for me, and we’re good to go. Plus our freezer will be more stocked with easy meals, not just frozen meat.

  3. We are simple around these parts – scrambled eggs and pancakes and fruit. This looks delicious though. Can I tell you my biggest hurdle to BFD is my husband? He is completely against the idea. I don’t know if it’s something about his Italian heritage or just his stubbornness!

  6. Delish! I tend to like the sweet breakfasts for mornings, then the not-so-sweet ones for dinner. Some faves include quiche, frittatas and breakfast burritos. Yum!

  7. bfd is the greatest thing since …. probably sausage. Our favorite: Pancakes, hashbrowns, eggs. Anything else we can add.

    My youngest loves oatmeal. here’s hoping she won’t pick out the blueberries. (If she does – more for me.)

  8. Yum! This looks great. I’ve still never tried baked oatmeal, and I have no idea why it always looks so good! I love breakfast for dinner, especially waffles. Jack doesn’t like pancakes and I am literally baffled by it every time!

  9. Thanks so much for the Almond Milk info because I probably would have done that. I don’t have a problem with real milk in recipes though. But what I keep on hand is canned milk – like carnation evaporated. Do you think that would work or should I stick to the script?

    • I’m not 100% sure, but since canned milk is generally good for cooking/baking, I’m thinking it would be fine! Let me know if you give it a try!

  10. This is the perfect time of year for blueberry recipes – I love them! I’ve never tried with the coconut before, but I would definitely enjoy this:) We do breakfast for dinner too (mostly when Dad is traveling…). It’s always a hit!

  11. Hi Katie! Thanks for the great recipe idea! I am relatively new to cooking. Two questions… Could one use defrosted blueberries instead of fresh? Or would it make it too soupy? Also, do you know if this freezes well? I’m a singleton and can’t eat 6 servings that quickly. Thanks so much!
