My Summer Cookout Go-To Recipe: Guacamole Salad


Guacamole Salad NewSummer cookouts are upon us, and that means we all need a quick, easy, go-to dish to contribute to the food table.

This one has been my stand-by for years, and it’s guaranteed to be a hit, both for you and the other party-goers. It requires no cooking—just a lot of chopping—and ingredients can be added, subtracted, and substituted at will.

It can also be served in a variety of ways, depending on the situation. Plopped on top of crushed tortilla chips, it becomes a delicious taco salad meal. Or serve it next to the chips as a dip. You could also wrap it in a tortilla, or just dig into it with a fork as is.

It’ll be yummy no matter what, I promise!

Guacamole Salad

slightly adapted from Branny Boils Over
serves 8

2 large tomatoes, diced
2 large avocados, diced
2 yellow, orange, or red bell peppers, diced
2 cups black beans (drained and rinsed if from a can)
4 scallions, thinly sliced
2 tsp minced jalapeño
2 tsp minced garlic
3 tbsp fresh lemon juice
1/2 tsp salt
1/2 tsp pepper
pinch of cayenne pepper (or to taste)

1. Chop all of your ingredients according to the ingredient list. Combine first seven items (through minced garlic) in a large bowl.

2. Whisk together lemon juice, salt, and peppers. Pour over salad.

3. Serve immediately or refrigerate until ready to serve.

  1. This looks yummy. I get the chopped fresh salsa at the grocery store and mix it with mashed avocado for my own “homemade” guacamole. Everyone loves it, but I’m going to try this next time!

  2. This might be my new one! Lately I just say dessert when going to a potluck. My friend used to make this fantastic bean salad that I borrowed for awhile.

    WOW! Your picture had me drooling. I love guacamole and it’s definitely a go-to for summer. I can’t get enough of it. We put it on burgers, on steak, you name it 🙂
